Stillwater opened in October 2000 following a considerate adaptation of the historic 1830s flour mill in which it is housed. Located on the banks of the kanamaluka/Tamar River in Launceston, and comprises an award-winning restaurant and boutique accommodation. The restaurant menu is shaped by the seasons, with local produce availability guiding what appears on the plate. The kitchen maintains close relationships with producers. Chef Craig Will's cooking is locally focused and imaginative, moving across culinary traditions while grounding dishes in excellent Tasmanian ingredients. The wine list has been inducted into The Australian Wine List Awards Hall of Fame, with a particular focus on Tasmania's flagship expressions. Stillwater received three consecutive Good Food Guide hat listings, every year the guide went regional (which has now ceased), making it the only northern Tasmanian restaurant to appear in the guide. Stillwater Seven opened in 2019, offering seven rooms carefully designed to retain the original features of the heritage building while providing contemporary comforts. Each room is stocked with Tasmanian produce, books, and furnishings. The property has received national accolades for both design and service since opening and serves as a well-located base for exploring the Tamar Valley region.
