Indulge in a unique dining experience that celebrates the excellence of Southern Bluefin Tuna. Freshly caught in Tasmanian waters by Mures very own fishing vessel Selkie, the evening begins with a thrilling carving ceremony, where a whole tuna is expertly honoured and sliced in front of guests by Fisher Jock Mure. Guests are then treated to a 4-course degustation that is prepared directly from the freshly carved tuna. Known for its vibrant colour, texture, and rich umami flavour, each course showcases the versatility and freshness of this premium fish. Throughout the evening, each dish will be paired with Stefano Lubiana wines, presented personally by the Winemaker and carefully selected to complement the Tuna and the flavours found in each course. This impressive hook-to-plate feast honours not just Tasmania's renowned seafood produce, but also the time-honoured practice and knowledge of a third-generation Tasmanian fishing family.
